In training rooms, would anyone be up for a historical battle like the ones below? Note (all tanks without module notes are assumed to be same module loadout as the others above it, and unless otherwise specified, modules are assumed to be maxed)

That actually sounds pretty cool.
We can also do the battle of Stalingrad where the Russians have 7 tanks but only 5 rounds each and the German side has 4 tanks with a full loadout. Then we play best 5 out of 7(if we want to stay real historical we can do it over many months).
I'm in. How historical do you want to make them? IIRC, the t34's didn't have the 88 yet at Kursk but the Germans did have the panther. Too bad we can't make uneven teams, then we could give the Russian side their numerical advantage to even out the individual German armor superiority.
Same thing with the Americans. How many 75mm armed M4's would it take to knock out 1 tiger? Or panther? Or King tiger?
We could also reenact some tank fighting in the battle of France in 1940. Won't be as bloody as those listed above but it could be some fun with the lower tiers:

what about a early cold war scenario? Superpershings, pershings, and various M4s against the ISU, SU, and IS-2 and T-34-85
Trying to imagine this one, it could be very interesting. What year specifically were you thinking? I'm assuming almost immediately after the war, so maybe '46? We could make it into a scenario where Churchill's idea of war with the soviets became a reality.
The Americans would have at their disposal a lot of Shermans and wolverines, but also some more jacksons, hellcats, and ultimately pershings. Might we also give them a few T95's (albeit with the 105)?
The russians would have their t34/85s and IS's, but also some fairly new is-3s (with the d-25 gun though) and maybe some t44s (though they'd mount the 85 mm). I don't think we can give them anything better except for some heat spamming derp ISUs.
We could also try a scenario where Operation Downfall happened and the US invaded the Japanese mainland. No O-1 tanks in blitz yet, but they'd definetly be part of this if they arrived. In meantime, the Japanese would have some Chi-has but also the newer chi-nus, chi-tos, and maybe chi-ris? They'd be going up against mostly Shermans but maybe some pershings and possibly a doom turtle? I recall TDs weren't too popular in the pacific because of the open tops so maybe limit the amount of those.

I already have an answer to your last 3 questions:
Tiger 2: 3 or 4 (depending on gun)
JagTig: 1, maybe 2
Maus: Inifinite. Can't pen ANYWHERE
And the Korean war scenario can be slightly tweaked as you like. It's already a good representation of the early cold war.
Korean War:
Pershings and stock Pattons vs fully upgraded T-34-85s and a couple T-54s.
Cold war brawl!:
T62-As vs Leos, M48s, M103s, Centurion 7s (it's the closest thing we have in Blitz to a "heavy" MBT.) Maybe an STB-1 (let's pretend it's a Lend Lease version)
